The story of Rustic Roadhouse is a classic tale of a man who became fascinated with the culinary world through his work in the industry and his love of travel. Chef Alberto Vilchis was born in Mexico City and has worked in restaurants and nightclubs in Cancun, Ixtapa, and Los Angeles, and managed restaurants in San Francisco and Denver. He owned and operated his own restaurant on Denver’s popular 16th Street Mall, serving authentic and upscale Mexican food.
He’s since lived in Paris, France, where he studied at the world famous Le Cordon Bleu, receiving a pastry chef diploma. He also traveled to Italy to learn classic pizza and bread making methods at ICIF (International Culinary Institute for Foreigners). Throughout his time in North America and Europe, family road trips always included sampling authentic, savory food at upscale local restaurants and roadside dives.
Back in the US, Alberto decided to take a roving kitchen out on the road to share his passion for simple, delicious food, inspired by the many roadside cafes, taverns, inns, and restaurants he loved during his travels, And like those classic establishments, Rustic Roadhouse is a place for good times, simple food you crave, and warm camaraderie.
